According to Du Zhizhi, the Ramomiaceae Samara vine is known locally as "Glycyrrhiza uralensis" or "Big Pair". Its peel can be used to pickle pickles, roots can be used as medicine, and the whole plant can treat tuberculosis. The legume medicinal plant Maoguoyu has a sweet taste and is sometimes used as a substitute for licorice in ethnic medicine.
The researchers traced and separated the taste activity of the winged vine and found that its peel contains 10 new sweet steroidal glycosides, the sweetness of which is 50 to 400 times that of sucrose; and 7 of them are found at the root The new sweet compounds are 25 to 400 times sweeter than sucrose.
In the hairy vine, the researchers found four new sweet triterpene saponins, two of which are 150 times and 80 times sweeter than sucrose. Du Zhizhi said: "We have found that these two compounds did not show toxicity at the tested concentrations through animal acute toxicity experiments, and the rationality of the use of vines as a licorice substitute has been confirmed from the perspective of sweet taste."
The researchers said that the discovery of these sweet plants and their highly effective sweet molecules provides a wider choice for the development of natural sweeteners.
